Black Bean Vegetarian Chili

What does cooking have to do with a design newsletter?  I love the creation process of cooking, plus you have something delicious you can eat when you are done. A little bit of this, and a little bit of that. When you combine them, you find they are better together, just like design.

I love this recipe.  I started cutting back on meat the past month and I am really enjoying the new food.  Reduced meat means a lower grocery bill and my weight has been staying about the same.  I used to eat meat just about every day and have I been wanting to cut back.  The chili is made with black beans, which I love.

Ingredients

2 cans of black beans, drained
2 cans of diced tomatoes, chilis, and onions
1 12 ounces bag of veggie crumbles (I used Boca Burger)
Chili seasoning
Half an onion, sliced
Garlic paste or two cloves of garlic

Saute’ the onions and garlic on low-medium heat until they are translucent.  Add the beans, diced tomatoes, and veggie crumbles.  Turn heat up to medium and saute until it looks mixed in nicely.  Add chili seasoning to taste.  I used about a tablespoon, maybe a bit more but I kept tasting it.  I don’t like my food too salty but I like the heat, so I added a bit of cayenne to keep the heat but not add too much saltiness.

Serve with shredded cheddar cheese and cornbread.
