Paleo Coconut Crust Pizza

paleo_pizza_crustAs a creative person, I love to create in all types of ways.  Cooking is one of my favorites, plus you get to eat what you make.  I tried this healthy recipe a few days ago and used some leftover roasted chicken for the part of the topping.  It is really good and pretty uncomplicated to make.  I have made paleo pizza before but used the cauliflower recipe and it was just too time consuming.  This one is great with just a few ingredients and 10 minutes you have pizza crust. Serves 2 people, double for more 


1 cup shredded mozzarella cheese (I use the full fat type)
1 egg
1 tablespoon cream of buckwheat (or flax meal)
1 tablespoon coconut flour
1/8 teaspoon baking soda


paleo_pizzaPreheat oven to 425.
Mix all ingredients in a bowl until well combined.
Line a cookie tray with parchment paper and spread the cheese mixture on the paper as thinly as possible, using the back of a spoon or fork.

Reduce heat to 400 and bake on the top rack for about 15 minutes, or until the crust is starting to look golden in places. Remove from the oven and add desired toppings.

Bake for a few minutes, just to melt cheese on top.
