Lentil Burgers

lentil_burgersI decided to start sharing some of my recipes because for me, cooking is part of my creative process.  Plus, you get to eat what you make!  

Lentil Burgers/Patties

1 can of lentils – 8 ounces
1 – 1/2 cups of sliced mushrooms
1/2 cup onions
1 cup of spinach
1/2 cup of coconut flour
Coconut oil
1 1/2 tbs of braggs amino acids

Saute’ mushrooms, onions and spinach in a skillet until translucent.  In a food processor, process the lentils until smooth.  Then add in the mushrooms, onions, and spinach and process, add amino acids.  Last step is add the coconut flour and process.  The mixture should be smooth and somewhat solid.  Next, get pan and line with parchment paper and form into patties.  Bake at 375 for about 30 minutes turning over.  Patties should be brown on both sides.  Serve with a side vegetable, make a burger or good on their own.  Yum!!! 

If you want to use breadcrumbs, use 1 cup.  I only used coconut flour to reduce my grain intake.  Coconut flour easily soaks up liquid so that is why I used a smaller amount.
